• Lift up the joint of the wing using a fork.

• Cut the shoulder at the wishbone (the joint between the neck and the top of the wing).

Carving guinea fowl

Carving a guinea fowl is nice and simple if you follow the three main steps in the order given below:

 

Carve the legs
Carve the wings
Carve the breasts

 

 

• Cut the skin downwards along the leg towards the joint.

• Detach the leg from the guinea fowl’s body by cutting through the leg connections. Repeat for the other leg.

• If your guinea fowl is very big, cut the legs in two, at the joint, between the thigh and the drumstick.

• Also detach the breast from the wishbone. For a large guinea fowl, cut the breast into two pieces.


N.B. The breast is called a “fillet” when it is completely deboned.
