Salad of Grilled Supremes with Coarse Salt

Ingredients :

4 guinea fowl supremes • 2 teaspoons coarse salt • 20 cherry tomatoes • 1 lettuce • 20 baby corns • 2 fresh goat’s cheeses • chives • olive oil • balsamic vinegar • salt • freshly-ground black pepper

  • Sprinkle the supremes with coarse salt and place under the grill for 8 minutes each side. Leave to cool and cut into strips.
  • In a salad bowl, mix the guinea fowl strips together with the cherry tomatoes, baby corn cut in half, diced goat’s cheese and the lettuce.
  • In a small bowl, mix the balsamic vinegar and olive oil and season to taste.
  • Pour the vinaigrette over the salad, add the chopped chives and combine.
